corn cakes (gone wrong)


summary of ingredients:

1 cup of corn flour
1 can of corn kernels
a bunch of parsley
ground black pepper
4 egg white
rocket salad
balsamic vinegar
oil

although the photos present the process and product as appetising, i say that the corn cakes have gone wrong because they should have turned out more spongy than they did. they taste more like corn cookies than corn cakes. perhaps, the amount of corn flour should have been reduced. or maybe, i should have just used the regular consistency for pancakes and add corn kernels in the batter.
