











Begedil preparation is fairly labor intensive. These 30 Begedil took about 2 hours to make. The potato slices need to pound in batches if your mortar and pestle set is small, which will usually be the case.

13 large potatoes
4 cloves of garlic
3 clumps of spring onion
2 cubes of chicken stock
4 eggs
oil
salt
pepper

A healthier version is to microwave the potatoes with a little water for 8-10 min on high or add them to boiling water and boil them for 15min until soft.
Remove cooked potatoes from water.
Mash them with a fork and follow the rest of the steps without so many cubes of chicken stock (i hope those are non MSG!).
